The USDA grading scale was designed to measure the FAT CONTENT of beef. Because our longhorn beef is naturally lean, we literally to not rate on this grading scale. This puts our beef in an "exotic meat" category (unofficial terminology to be fair) and we have capitalized on this fact ever since. As a side note; ANY solely pastured/grass-fed only beef is not going to grade well according to this grading system, as it is the nature of the beast to be a leaner meat.
This being said, USDA grading does not necessarily indicate QUALITY of beef either. Whether it is graded prime or otherwise, the FLAVOR quality of the beef rests entirely in the mouths of the taster. We believe we have a high quality beef product regardless the grading absence. We are careful and deliberate to provide the best natural nutrition available to us for our beasts that they live disease & illness-free lives;happy cattle make tasty steaks! We do not follow many traditional cattle practices and our beef is free of antibiotics, hormones, steroids & pesticide exposure. We also do not feed grain to our beef animals, assuring they live according to how they are designed, yielding a deep dark color beef with little to no fat content.
