Recently it came to light that we are saying it all wrong. Grass-fed & grass-finished is a lot of wording! We started saying what is all RIGHT... 100% PASTURED. So, what does that mean?
Longhorns are natural foragers. They eat a broad spectrum of plant life, including pasture grasses of all kinds, weeds, vines, brush, brambles, briar-patches and even tree bark.Their diet is not limited to only pasture grasses, yielding a nutrient-dense beef product that has a higher percentage of protein than commercial cattle. THIS IS GOOD NEWS!
Oftentimes, commercial cattlemen will run longhorns with their herds to help 'clean up' what the commercial beasts won't touch. We have had the experience several times where we turned our herds into heavily overgrown areas that they cleaned up and even made four-wheeler tracks passable for our neighbors!
How does this affect the beef you are consuming? This creates a 'beefier' flavor, with so much less 'marbling' than commercial breeds. It also means less waste, as the fat content is closer to 95 - 98% lean, which creates less shrinkage and more finished product to eat. We have tested the theory over and over with new clients who believe they need a plate-sized rib eye steak (to each their own!) with the results being they were unable to finish the same weight in our beef as commercial beef. This makes us the economical choice as well! Less is more, so to speak.
The health benefits to humans are numerous, but the key component of our desire to raise this breed is in how it also impacts the animals' health and local environment. With a denser meat product being the end result, this also means that our beasts are naturally wormed through the consumption of specific tree nuts and weeds, giving us less to supplement in their diet. We must pasture them in controlled environments; that's the requirement of cattlemen across the nation.
