When we first launched this adventure (what else would you call going from suburbanite to cattle rancher?), we were sold on the idea of making money with selling beef. We're pretty honest about that; our goal was to process animals and turn them into cash. Oh boy, did we ever bite the fruit of the forbidden tree! We were sold on an idea, delved hip-deep into (literal) bull dung, and came out CLEAN CLEAN CLEAN! And BROKE BROKE BROKE!
Our first couple years, we had absolutely no idea what we were getting into. Even the locals around us knew that "them dang Yankees done bit off more than they can chew". Yup. We agree. But as those first very harsh, painful and difficult years came to a close, we discovered some very scary things on this side of food production: not everyone out there wants to feed you right. What started as a money-making idea, turned into a "going-broke-now-passionate-mission" to produce the best we absolutely can. The proof is in the package. The desire to keep going is in YOU. Literally and figuratively.
During the course of this several hour discussion, we realized our intentions have evolved. Sure we'd like to see more cash flow. Sure we'd like to not go broke every winter keeping everyone alive. Sure we'd like to grow. Now, though, our intentions are to BE INTENTIONAL about what you are eating. It has become so much less about the commodity and so much more about YOU. And us. And our families. And our families' families. We're not selling beef, we're feeding families. The bottom line will always be less than we desire, but that bottom line carries with it a more significant value that a dollar sign. We are passionate about YOU.
The startling truth is that many meat producers don't care much about the livestock they raise as long as that bottom line is thick and green. While we respect them for their hard work (it's hard work regardless), we are thrilled to death to finally be connected with those farms and supporters that DO care about the health and well-being of the livestock. And we learned too that our bottom line isn't near as thick and green as the ground is from where our livestock feeds. That's the bottom line: healthy dirt grows healthy grass that grows healthy livestock that feed us healthy meats. Period. Unintentionally we have become intentional.
We are excited to see the early shoots of the fruits of our labors coming up (and yes through a lot of bull dung!). We are excited to know that our clients are just a fraction of consumers who are realizing what they eat is more important than the cost (because you're paying one way or another!). We are excited to learn the dim light of that passion has never died out and the fire that was set in our hearts to do and be right on the side of our livestock is the same as doing and being right by you. We're mostly excited that all the blood, sweat, tears, fights, brokenness and exhaustion will pay off in dividends that cannot be measured. We say this all the time and now more than ever is it the truth: We CANNOT do what we do without you and BECAUSE OF YOU we do what we do. Thank you for supporting local, for supporting sustainability, for supporting us. We look forward to 'meating' you always. God Bless!
